I’ve now spent nearly a year on the working side of a bar every Sunday. I went into the adventure planning on maybe doing a few shifts as a barback for Jason at 320 Main and somehow managed to progress from Jason’s shadow to Sunday Lunch Bartender to Sunday Night Bartender in the process.

In that year I’ve learned a lot of things and had my notions about cocktails, bartending, and bar patrons adjusted – some views more violently than others. Here are five things that I’ve learned so far.

You ever flip for a fizz? Are you sweet on sours? Eggnog aside, the cocktail world has three classes of drinks that traditionally call for the use of eggs, used either whole or in part.

This week and next, we’ll look at how to use eggs in cocktail making. We’ll start, today, with a look at egg safety and the dreaded salmonella. Next week, we’ll consider specific classes of eggy cocktails: the flip (which uses a whole egg), the fizz (which can use whites, yolks, or both) and the sour (which can, but doesn’t always, use an egg white).

TOTC night one

First off, let me say, I intended to take it easy last night. Didn’t really work out that way….

Crashed the Grey Goose Insider party with Sean who was invited. Met Nick Pattone & he made me a drink. Saw Tony Abou Gahmin, met his girlfriend but didn’t get around to talking to him.

Made some drinks at the guest bar that were popular & got talked into auditioning/interviewing for a spot on Behind The Bar.

Hung out with a ton of cool peeps & met a bunch more (kevin the bartender from LA that was working the party).

Finished the night where I started it, at the
Old Absinthe House. 

Do I really have four more nights???
